Summer vibes include lazy pool days, sizzling barbecues, afternoon naps under a tree, boat rides, fireflies, and refreshing cool desserts including this: the easiest no-bake summer cake!
It requires 5 ingredients, takes about 15 minutes to put together and is guaranteed to have your family and friends asking for more! It’s perfect for summer because of the fresh berries and also makes a great dessert to bring to 4th of July festivities .The berries are the perfect color.
What you need:
1 Angel Food Cake from the bakery department at your local store
Carton of strawberries
Blueberries
Raspberries
Cool Whip – I always use lite
How to make it:
Take 4 of the prettiest strawberries and set aside for later.
To make the filling, slice the strawberries into small pieces and combine the with half of the blueberries, raspberries and cool whip. I use a couple of large dollops of the cool whip and mix it all together.
Slice the cake in half so you have a top and bottom. Add filling top of the bottom half and place the top back on top of the filling.
Take the remainder of the cool whip and spread it around the cake, covering the whole surface.
Cut the tops off of the strawberries you set aside and slice them in half from top to bottom. Add them to the top of the cake in a ‘star’ pattern with the ends facing out. Add the remainder of the blueberries and raspberries to the bottom of the cake.

This is the easiest cake I have ever made! It does need to be refrigerated until serving because of the fresh fruit.
If bringing it to a BBQ, keep it out of the sun and have a bowl of ice to set the cake plate on to keep it cool OR just serve it inside.
I have been making this for years and I always make two because everyone always wants seconds! My son in law says it is the best EVER! So, I would say that’s pretty good.
